We re-engineered their menu taking into consideration not just the items which weren't selling,
but the workload distribution in the kitchen. The highest gross profit items were
where the guests' eyes went. We increased sales by 2½% and the bottom line by 20%.
We didn't change the menu in any other way, not in paper, stock, descriptions, or the size of the menu.
Larry has provided restaurant consulting services since 1985. His extensive experience includes everything from conceptualization and financing to management and operations. He's made the mistakes, so he understands what it takes to recover from them.
